2026 Mardi Gras Flavors Amplified by Live Fire Cooking
When asked about how the aroma and live fire cooking excites guests, Chef Jens Dahlmann explained that it is both the visual and sensory perspective is amazing. While it makes a big statement, it took planning to make it happen.
Chef Dahlmann said, “last year, we started with our first wood-fired grill in Puerto Rico. We felt really good about it and decided to quadruple down on it. This year, we have four live fire experiences.”
While the moment captures guests’ attention, the cooking celebrates the ingredients. Chef Dahlmann said, “when you work with life fire, it is about the great ingredients. You want to cook them perfectly with both smoke and fire. It is an opportunity to tell the story of the country we’re trying to represent.”
For example, as the charcoal mixes with the jerk spices, it captures Jamaican cuisine. The dish might not be enjoyed on a sandy beach, but it feels authentic. It happens because the culinary team chooses to exceed expectations.

For Chef Dahlmann, he knows that his team is up to the culinary challenge. More importantly, he allows them to shine. The Puerto Rico food menu is a prime example.
Specifically, the unique dessert, Coconut Flancocho, came from his pastry team. The mash-up of a luscious coconut flan with a moist pineapple cake topped with a rum whipped topping is superb.
As Chef Dahlmann shared, “I told my team that I wanted to have a great dessert for Puerto Rico. It makes the storytelling richer, deeper. Plus, since my team has a little skin in the game too, they are going to ensure that it is perfectly executed every single time because they created it.”
While his culinary team had a strong hand in the Puerto Rico menu, Chef Dahlmann is deeply connected to the Austria booth, specifically the Kaiserschmarrn. For those unfamiliar with this dish, it is a torn fluffy pancake served with apple sauce, lingonberry jam and powdered sugar.
Chef Dahlmann shared, “It means a lot to me. I have a lot of heart in it because this recipe is inspired by my sister-in-law. She’s from the Salzburg area and it brings back memories.”
Enjoyed with Eiskaffe, an iced Vienna coffee, the moment feels like a glimpse into a café in Vienna. Even if Jaws can be seen over your shoulder, you can appreciate what that moment can be like.
