As the upbeat jazz music sets a lively tone, Universal Orlando’s Mardi Gras food extravaganza is a feast of epic proportions. From New Orleans classics to hearty Austrian dishes, guests travel the globe one plate at a time. The classic song lyrics say feet don’t fail me now, but everyone’s stomach better make room for all delicious food and beverages.

For the past several years, Universal’s Mardi Gras celebration explored global food options. While there will always be a place for beignets and po boys, appreciating other cultures’ connection to the carnival season expands the menu greatly.

This year, the food and beverage offerings are quite diverse. From the Caribbean to Europe, the food invites people to try a new dish and find common connections uniting Carnival food from around the globe.

Since the portions are sample sized, no one feels gluttonous eating at each stop around the theme park. Plus, this event runs way past Fat Tuesday. There are many opportunities to taste all the items before the event ends on April 4, 2026.

Must Try Dishes from 2026 Universal Orlando Mardi Gras Menu

Verlasso Salmon: Chile Patagonia

One of several dishes cooked over live fire, the Verlasso Salmon has just the right amount of smoky char to balance the vibrant herb marinade. Served with crispy potatoes, it is a hearty dish. It is definitely worth the walk to the back of the park.

Kaiserschmarrn: Austria

A traditional Austrian dish, these fluffy torn pancakes are the perfect little mid-day treat. Served with apple sauce and lingonberry jam, it is just like the dish that would be served in Europe. These bites need to be devoured as soon as they come off the griddle.

And, do not miss the traditional Eiskaffe, an iced coffee. The food and beverage pairing is the best of the options.

Coconut Flancocho: Puerto Rico

While everyone’s favorite Pinchos de Lechón returned, the unique Puerto Rican dessert mash-up is a must try. Combining a coconut flan with a pineapple cake, the recipe was created by a Universal pastry chef.

The luscious coconut flan tops the cake’s delightful moist crumb. Although, a little flaked coconut or even a nut crumb would add textural dimension. Still, as an innovative dessert it deserves a moment in the spotlight.

Picanha: Brazil

Another live fire cooked food, the traditional Brazilian beef is beautiful cooked on the Santa Maria grill. Topped with molho à campanha and farofa, it captures that Carnivale flavor. Even if the line is long, this dish is worth the wait.

Sfogliatelle “Lobster Tail”

Since the Winter Olympics coincided with Mardi Gras this year, why not enjoy a taste of Italy. This delicate, flakey pastry contrasts a fluffy whipped cream. It is a great dessert for people who want a little sweet but nothing cloying.

Colors of Mardi Gras Cocktail: Daiquiri Deck

Cocktails are always part of the Universal Mardi Gras experience. This year, the Daiquiri Deck offers a visually fun choice. Although people love the Krewe Cup, it can be difficult to see the colors with that refillable option.

The Colors of Carnival combines King Gator Margarita, Canal Street Colada and Bourbon Street Blast. Whether drunk one layer at a time or sipped as they slowly meld together, this frozen libation is a must try.

The 2026 Universal Mardi Gras food and beverage offerings in Universal Studios Florida are available for purchase during the event’s run. A tasting lanyard is available, which offers a slight discount.
